Working closely with the senior culinary team, youll take ownership of the sushi section, overseeing the preparation and presentation of exceptional sushi and sashimi while leading and developing your team. What We Offer: £66,200 per annum + tips Excellent career progression opportunities Ongoing training and development Staff meals and dining discounts The opportunity to work within a growing international hospitality group What You'll Do: Lead and oversee the daily operation of the sushi section, ensuring exceptional quality, consistency and presentation Prepare and execute high-quality sushi and sashimi dishes to Shanghai Me standards Manage, train and develop the sushi team, maintaining a positive and professional kitchen culture Ensure the highest standards of fish handling, freshness, portion control and product quality Oversee daily mise en place, stock management and ordering to ensure efficient kitchen operations Maintain strict hygiene, HACCP and food safety standards at all times Work closely with the senior culinary team to ensure smooth service and consistently high standards What We're Looking For: Extensive experience in sushi preparation and Japanese culinary techniques, ideally within a luxury restaurant, high-end hotel or premium hospitality environment Previous experience as a Sushi Head Chef or Senior Sushi Sous Chef ready to take the next step Exceptional knowledge of sushi, sashimi, fish handling and ingredient quality Proven leadership skills, with the ability to train, motivate and develop a team Strong organisational skills and the ability to maintain standards in a fast-paced, high-pressure environment A genuine passion for Pan-Asian cuisine, craftsmanship and attention to detail A hands-on approach, strong work ethic and commitment to culinary excellence Food Hygiene Level 3 certification is preferred Ready to take the lead in your sushi career?
