Are you an experienced Butcher looking for a permanent position with a well-established food production business? Do you have previous experience cutting and preparing meat to specification, with a strong focus on quality, yield, and attention to detail?
Our client is looking for a Butcher to join their busy production operation in Derby. This is a permanent position working 4:00pm-1:00am, where you will be responsible for preparing and cutting meat to customer specifications, ensuring products meet the required quality standards and are packed and prepared correctly for distribution.
Previous butchery experience is essential, with good knowledge of food hygiene advantageous. Full training will be provided on company procedures and processes.
As the new Butcher, you will:
- Cut and prepare meat to the required customer specifications
- Ensure the correct product is supplied for each customer requirement
- Maintain consistently high standards of butchery and product quality
- Work with a strong focus on yield and minimising giveaway
- Ensure all meat used is correct for the required job
- Pack and scan products accurately and ensure they are presented correctly for distribution
- Ensure all products are prepared in line with agreed specifications and company standards
- Follow all food safety, hygiene, quality, and legality requirements
- Ensure red meat and poultry are not handled at the same time to prevent cross-contamination
- Ensure raw meat and wrapped cooked products are not handled at the same time
- Monitor the quality of meat received and report any issues to the Production Supervisor
- Report any equipment defects or problems to the Production Supervisor
- Ensure stock is stored and rotated correctly in line with company procedures
- Maintain a clean, safe, and organised working environment
- Follow all company Health & Safety and hygiene procedures
- Take responsibility for your own Health & Safety and that of others
- Support company initiatives and demonstrate company values at all times
- Complete any other reasonable duties required by the business
Main Requirements for This Role:
- Previous butchery experience is essential
- Experience cutting and preparing meat to customer or product specifications
- Good understanding of butchery standards and product quality
- Strong awareness of food hygiene and cross-contamination
- Good attention to detail and ability to consistently meet specifications
- Understanding of yield and the importance of minimising product giveaway
- Able to work efficiently in a busy production environment
- Reliable, hardworking, and able to work as part of a team
- Good understanding of Health & Safety within a food production environment
- Willingness to follow company procedures and quality standards
- Good communication skills and the ability to report issues promptly
- Food hygiene knowledge is advantageous, but full training will be provided on company processes
