This role focuses on leading the butchery team to meet production targets while ensuring adherence to strict quality, safety, and operational standards. The ideal candidate will drive performance improvements in areas such as product quality, yield, cost control, traceability, and compliance with health and safety regulations.
Key Responsibilities
- Team Leadership: Establish and maintain high standards of performance across the team. Drive accountability and performance management, ensuring targets are met.
- Health & Safety: Enforce all health and safety protocols, ensuring a safe working environment. Ensure team members are compliant with safety regulations at all times.
- Food Safety & Quality Control: Ensure all food safety protocols are adhered to, maintaining the highest standards of product safety, authenticity, and integrity. Oversee labelling, product traceability, and compliance with hygiene legislation.
- Operational Performance: Monitor yield, waste, and labour performance, identifying areas for improvement. Ensure correct use of systems and equipment, including Innova, Piranha/Shire, and butchery slicing equipment. Implement process compliance and ensure adherence to product specifications.
- Resource Management: Manage team rotation, holiday and absence planning, ensuring minimal disruption to production targets. Oversee training and development of team members, maintaining a skills matrix and planning for succession. Support and motivate the team to ensure continuous performance improvement.
- Communication & Reporting: Ensure clear communication across the team, escalating issues as required. Track and report on key performance indicators (KPIs) related to yield, labour, and waste.
Key Skills & Qualifications

- Excellent communication skills, with the ability to speak, write, and understand English fluently (essential for health, safety, and traceability purposes).
