The Sous Chef is responsible for supporting the Chef Manager to deliver the day-to-day operation of all aspects of catering services provided onsite; fresh food production, service delivery of café and hospitality agreed offers (across two sites) and managing food quality and costs., Support the planning and costing of menus that reflect client and customer expectations aligned to seasonal/market trends

  • Prepare food to the highest standard in line with PINCH style and standards

  • Monitor controls of food quality, presentation and service

  • Control costs through efficient purchasing, use of stock and waste minimisation

  • Maintain a professional and friendly manner with fellow catering team members, customers, the client and suppliers

  • Seek customer feedback during service and use this information to develop the food offer with the Chef Manager

  • Deputise for the chef manager on occasion, directing and leading the catering assistants within the team

  • Comply with all statutory health and food safety quality and standards, including HACCP, allergen management and COSHH

  • Support the completion all PINCH accounts administration in a timely fashion, including monthly stock takes

We are looking for someone who enjoys being at the heart of the catering operation, a team player that is comfortable interacting with customers and takes great pride in delivering top notch food and service consistently., Solid experience at sous or senior CDP chef level with track record of producing high quality food from fresh ingredients in a busy environment

  • Passionate about food and demonstrates food trends awareness across the food service industry and high street

  • Displays excellent product knowledge and understanding of seasonality, quality and costs

  • Competent in using Microsoft Office, particularly Word and Excel and ability to use email and internet

  • Able to understand budget and to implement necessary controls to ensure budget is achieved

  • Good interpersonal skills and command of English language

  • Supervisory/team management experience preferred but not essential, * sous/CDP chef level: 2 years (required)
