Night Shift: Monday–Friday, 10pm–6am

As Bakery Production Manager, you’ll lead our central bakery operations, overseeing the production of our signature cookies, handcrafted doughnuts, and key brunch items that supply both our café site and wider retail offering. This is a hands-on, fast-paced role for a passionate and organised leader with a keen eye for quality and a love for sweet bakes. You’ll be responsible for ensuring our products are made to the highest standard, every time — managing production workflows, leading the team, and keeping quality, consistency and creativity at the heart of everything we do.

In this role you will:

  • Manage the day-to-day production of our full bakery range, including cookies, doughnuts, brunch prep and seasonal specials;
  • Lead and support a team of bakers, decorators and production staff, ensuring everyone works safely, efficiently and collaboratively;
  • Maintain the highest food safety and hygiene standards across the production kitchen, ensuring full compliance at all times;
  • Oversee stock management and ordering, working closely with suppliers to ensure we have the best ingredients at the right price;
  • Work with the Head of Food and Café Manager to develop new product ideas and support launches of limited‑edition items and seasonal menus;
  • Implement systems and processes to improve production flow, reduce waste and increase consistency across all products;
  • Ensure smooth communication between the bakery, café and retail teams, including packaging, delivery and storage logistics;
  • Play a key role in scaling production during peak periods and supporting new growth opportunities.

About You

The ideal candidate will have:

  • Previous experience managing a bakery or production kitchen, ideally producing at scale;
  • A strong understanding of sweet bakery items (particularly cookies and doughnuts), with a creative and quality-driven approach;
  • Knowledge of brunch kitchen operations and ability to support prep and planning for our café service;
  • A hands‑on leadership style with proven experience managing and motivating a small, fast‑moving team;
  • A strong grasp of food safety standards, allergen management and HACCP procedures;
  • Excellent organisational skills and the ability to juggle multiple priorities in a busy production environment;
  • A passion for the craft of baking and a genuine interest in food trends, innovation and product development.
