We’re looking for a People Development Chef to be the custodian of our Chef Career Pathway and look after all things training and development within our Food Development Centre. We’re looking for an experienced chef trainer or Head Chef who has a track record of strong succession within their teams. You’ll be a real people person and be passionate about mentoring, training and developing. We would welcome applications from college lecturers or people that have experience working with employers on apprenticeships.

Your duties will include (but aren’t limited to):

  • Being the Custodian of our Chef Career Pathway, and the go-to person for all things chef development.
  • Overseeing our Level 2 and Level 3 Apprenticeship Programme – running the culinary masterclasses, inspiring chefs, liaising with Head Chefs and General Managers around their learners.
  • Looking after our internal Development programmes: CDP-Sous Chef and Sous Chef – Head Chef, as well as being involved in succession planning with the food team for first appointment sites.
  • Keeping culinary craft alive with our brigade of brilliant chefs by running monthly masterclasses, covering skills development classes in areas such as Butchery, Game, Fish Cookery, Bread and Patisserie, Sunday Roasts etc.
  • Be the Custodian of our Food Development and Learning Centre, based in Wandsworth – our training kitchen which you will be fully in charge of.
  • Support our teams within their businesses by bringing food and people development skills together to showcase exemplary standards within key trading days.
  • Support the Exec Chefs as required to develop recipes and menus and assist with roadshows, CAPEX programmes and training days for both refurbishments as well as for recruitment.
  • You’ll also support our Exec Chefs in delivering regular chef forums to our Head Chefs.

What we are looking for in our People Development Chef:

  • Extensive knowledge of British seasonal produce, food trends & best in class premium pub food.
  • A strong communicator and mentor who can deliver impactful sessions with our operations teams – chefs of all levels, as well as front of house up to GM.
  • Minimum 3 years’ experience in a Chef training or Senior Head Chef Role.
  • Ability to demonstrate team development & succession.
  • Can effectively engage and inspire kitchen teams to nurture, train and develop talent.
  • Exceptional culinary skills, and a real people person – you can vary your approach based on the individual.
  • Full understanding of stock management & recipe creation in a compliant kitchen environment.
  • Sound knowledge and awareness of kitchen H&S.
