As we continue to grow, we are seeking an ambitious, commercially minded Restaurant Manager to lead our team and help drive the business to the next level.

The Role

As Restaurant Manager, you will take full responsibility for the day-to-day operation of the restaurant, leading from the front and maintaining the highest standards of hospitality, service, and operational excellence. You will be expected to build strong relationships with guests, motivate and develop the team, manage labour and costs effectively, and actively contribute towards growing revenue through events, repeat business, and local marketing initiatives.

    • Deliver exceptional customer service at all times.
    • Build relationships with regular guests and local customers.
    • Lead by example on the restaurant floor.
    • Handle customer feedback and complaints professionally.

    • Recruit, train and develop restaurant staff.
    • Create and manage rotas effectively.
    • Conduct regular team briefings and performance reviews.

  • Commercial & Financial Management
    • Monitor and manage labour costs.
    • Drive sales and maximise revenue opportunities.
    • Monitor daily, weekly and monthly performance.
    • Improve average spend per customer.
    • Work alongside ownership to achieve agreed business targets.
    • Assist in stock control and cost management.
  • Business Development
    • Increase bookings and customer footfall.
    • Develop local corporate relationships.
    • Promote private dining, functions and events.
    • Work with marketing initiatives and promotions.
    • Generate new ideas to increase trade during quieter periods.
  • Operational Excellence
    • Ensure smooth day-to-day running of the restaurant.
    • Maintain food hygiene and health & safety standards.
    • Liaise with kitchen and front-of-house teams.
    • Ensure opening and closing procedures are completed correctly.
    • Maintain high presentation standards throughout the venue.

Candidate Requirements

Essential

  • Minimum 3 years' experience as a Restaurant Manager, Assistant Manager or General Manager.
  • Strong leadership and people management skills.
  • Excellent communication and interpersonal abilities.
  • Commercially aware with strong financial understanding.
  • Experience managing labour costs and rotas.
  • Passion for hospitality and customer service.
  • Ability to work evenings, weekends and busy service periods.

Desirable

  • Experience within premium casual dining, independent restaurants, boutique hospitality venues or premium pubs.
  • Event management and private hire experience.
  • Marketing and business development experience.
  • Knowledge of Sri Lankan, South Asian or international cuisine.
  • Personal licence holder.
