We are a family‑owned seafood specialist, sourcing premium sustainable seafood for over 20 years. Our story began with our co‑founders Ben and Robin becoming oyster merchants, developing into the UK’s leading seafood supplier, Wright Brothers wholesale. We also supply over 500 restaurants across the UK and have launched our online fishmonger, Wright Brothers at Home, delivering quality seafood nationwide. We proudly operate three London restaurants in Battersea Power Station, Borough Market, and South Kensington. Battersea is our biggest site and we are looking for a creative, enthusiastic and ambitious Sous Chef to support the Head Chef and lead the kitchen team to deliver innovative dishes. This role is perfectly suited for an experienced Sous Chef who is looking to progress their career and develop their skills.

Who You Will Be & What You Will Do

  • Passionate about seafood – we source directly from our suppliers in Billingsgate and Brixham to ensure a fresh and premium offering for our menu.
  • Creative – our ever‑evolving menu and specials provide opportunities to experiment and develop recipes for our menus.
  • Strong leader – while the role works with the Head Chef, you will also frequently run shifts and manage the team independently.
  • Strong organisation and people‑management skills are essential.
  • Financial and commercial awareness – understanding of costing, GP control, budgets and targets is necessary for successfully managing our kitchens.
  • Comfortable managing kitchen processes (H&S compliance, ordering, rotas) to ensure smooth daily operations and profitability, and comfortable with the fast‑paced high‑volume service of up to 300+ covers a day.
