Be Part of Something New

As we prepare to open our new restaurant in Covent Garden, we're looking for a passionate, talented Junior Sous Chef to join our kitchen team from day one. This is an exciting opportunity to play a key role in the next chapter of Wright Brothers, working with exceptional seafood and seasonal produce in a kitchen that values quality, precision and creativity. We're looking for someone who takes pride in their craft, leads by example and enjoys bringing out the best in others. Someone who respects great ingredients, thrives in a busy kitchen and wants to help build something special.

Our Story

For over 20 years, Wright Brothers has been passionate about sourcing and serving exceptional seafood. What began with our co-founders, Ben Wright and Robin Hancock, selling oysters has grown into Wright Brothers Wholesale, supplying more than 750 restaurants across the UK, a collection of much-loved London restaurants and Wright Brothers at Home, our online fishmonger. In 2024, we established the Wright Brothers Sea Change Foundation to support projects that protect our oceans, promote sustainability and champion the coastal communities that depend on them. Our philosophy is simple: work hard, be nice to people and be kind to our planet. We believe in great seafood, genuine hospitality and bringing good people together.

The Role

As Junior Sous Chef at our new Covent Garden restaurant, you'll work closely with the Head Chef and Sous Chef to deliver exceptional food, lead the kitchen team and maintain consistently high standards. This is a hands-on role where you'll support the smooth running of service, guide and develop junior chefs and help maintain the quality, organisation and efficiency of the kitchen. Working with outstanding seafood and seasonal ingredients, you'll have the opportunity to develop your leadership skills and contribute to a kitchen that takes real pride in its craft.

What You'll Do

  • Support the Head Chef and Sous Chef in the day-to-day running of the kitchen.
  • Lead sections and coordinate service, ensuring consistently high standards of cooking and presentation.
  • Work with exceptional seafood and seasonal produce, treating every ingredient with care and precision.
  • Coach and support junior chefs, sharing knowledge and leading by example.
  • Maintain excellent standards of food safety, hygiene and kitchen organisation.
  • Support stock control, portion management and waste reduction.
  • Contribute ideas and help maintain a positive, collaborative kitchen environment.

What We're Looking For

  • Experience as a Junior Sous Chef or a strong Chef de Partie ready to take the next step.
  • A genuine passion for cooking, seafood and quality ingredients.
  • Confidence leading service and supporting a busy kitchen team.
  • Strong organisational skills, attention to detail and consistency.
  • An understanding of food costs, stock control and kitchen efficiency.
  • A positive, hands-on leadership style and a willingness to learn and develop.
  • Good knowledge of food safety and kitchen hygiene.

The Wright Benefits

  • The opportunity to work with exceptional seafood and seasonal produce.
  • Staff meals on shift and unlimited coffee.
  • Discounted food and drinks when dining in our restaurants.
  • Hastee Pay, offering access to earned wages when you need them.
  • Employee referral scheme.
  • Training and development opportunities.
  • Supplier trips and industry learning experiences.
  • Discounted wine.
  • Opportunities to grow and progress within the business.
  • And, of course, a party or two.
