Wren & Raven is a growing, independent café in the heart of Penzance, entering our first full year after opening last June. With strong foundations and ambitious plans ahead, we are now looking to elevate and expand our bakery offering.
We are seeking a talented and experienced Artisan Baker to help us build something exceptional — from beautifully laminated pastries to handcrafted sourdough and breads baked fresh on site each day. This is an exciting opportunity for someone who takes real pride in traditional methods, quality ingredients and craft baking done properly.
The Role
This is a hands-on, skilled role working closely with our Head Chef and reporting directly to them. Together, you will shape the direction of the bakery section, ensuring it complements and enhances the wider food offering. The role will involve early starts and requires someone confident managing daily production to ensure the café is fully stocked for service and retail.
You will be responsible for:
- Producing a refined core range of baked goods to an exceptional standard
- Developing and delivering a rotating seasonal range of pastries and bakery products
- Laminated pastry production — including croissants and viennoiserie made on site
- Maintaining and developing our existing sourdough offering, with strong understanding of fermentation and dough development
- Bread production to ensure consistent supply for café service and retail sale
- Working collaboratively with the Head Chef on product development, seasonality and launches
- Baking entirely from scratch using quality ingredients and traditional techniques
- Delivering well-executed options that consider dietary requirements, including vegan and gluten-free
- Maintaining immaculate organisation, hygiene and food safety standards
We’re Looking For Someone Who:
- Has proven artisan bakery experience
- Is confident in sourdough fermentation and laminated pastry production
- Understands dough development, structure and consistency
- Has knowledge of vegan and gluten-free baking principles
- Is comfortable with early starts and structured production schedules
- Is detail-focused and takes genuine pride in presentation and quality
- Can work independently while contributing to a collaborative kitchen culture
- Is excited by the opportunity to grow and shape a young, ambitious business
This role can be full-time or part-time for the right person, and we are open to discussion around structure and hours. There is real creative scope here. We are looking for someone who wants to take ownership of the bakery section, build on our strong sourdough foundation, raise standards further, and help establish Wren & Raven as a destination for exceptional baked goods in Penzance.
If you are passionate about craft baking and want to build something meaningful within a growing independent café — we would love to hear from you.
