Chalk at Wiston Estate works alongside a multi award-winning winery set in the heart of the South Downs. Chalk opened in November 2021 at the award‑winning Wiston Estate vineyard and winery. We are a 50‑cover restaurant with private dining and courtyard offering. Chalk holds a TripAdvisor Travelers Choice Award and is listed within the Michelin Guide.

Job Overview

We are seeking an experienced Restaurant Supervisor to join our fine dining team. This is an exciting opportunity for a passionate hospitality professional to step into a leadership role within a high‑end, service‑driven environment. You will support the Restaurant Manager in delivering exceptional guest experiences, leading the front‑of‑house team, and ensuring smooth day‑to‑day operations.

Key Responsibilities

  • Supervise front‑of‑house operations during service
  • Lead shifts and support pre‑service briefings
  • Deliver outstanding, personalised customer service
  • Train, coach, and develop team members
  • Handle guest feedback and resolve issues professionally
  • Work closely with kitchen and bar teams to ensure seamless service
  • Support rota management, stock control, and reporting
  • Drive revenue through effective upselling and product knowledge

What We’re Looking For

  • Minimum 3 years’ experience in a supervisory role within a fine dining or high‑end restaurant
  • A passion for hospitality and delivering exceptional service
  • Strong leadership and communication skills
  • Excellent attention to detail and presentation
  • Good knowledge of food, wine, and service etiquette (WSET qualifications are a plus)
  • A calm and professional approach in a fast‑paced environment
  • Flexibility to work evenings and weekends
  • The ability to drive is essential due to the rural location.
