The Windmill Village Hotel, Golf Club & Spa is part of a vibrant and dynamic family business situated on the A45 as you leave Coventry towards Birmingham. The business enterprise includes The National Motorcycle Museum & National Conference Centre and The Manor Hotel - Marco Pierre White Steakhouse Bar & Grill.
We have an exciting opportunity for a Restaurant & Bar Manager to join our hotel; you will need to be able to drive operational excellence throughout the team, playing a vital role in recruiting, training and developing the team, putting together strategic plans for scaling up the business as well as providing full accountability for the department.
It is essential that the right candidate has evidence in sales growth, health and safety auditing, labour productivity, controllable costs and engaging teams, but most importantly be guest focused, ensuring that the customer experience we have become renowned for is delivered consistently.
Key responsibilities for the Restaurant & Bar Manager are:
- Oversee multiple outlets ensuring that service delivery and customer care to both hotel and external guests is maintained at all times.
- Check and monitor that all beverage and food items are prepared and served according to company standards and within statutory regulations. Promote additional sales/up selling whenever possible but always within the social responsibilities of the licensee.
- Control the ordering, receipt and security, requisition and issue, of all items sold/served, together with all other sundry items.
- Ensure that cellar management arrangements and duties are conducted effectively and safely. Assist with monthly stocktaking procedures. Ensure that monthly budgeted beverage gross profit percentage margins are achieved.
- Acquire a working knowledge of the menu, tariff and wine lists together with a full knowledge of the hotel’s food and beverage service policies and procedures.
- Control departmental costs, wastage and expenses. Encourage energy saving and other environmental initiatives, without detrimental effect on service or safety.
- Produce weekly work rotas and holiday schedules. Analyse staffing needs and prepare rotas accordingly, bringing in casual staff in line with business needs.
- Establish and maintain effective communication with staff and senior management/colleagues.
- Help with organising and running of special events (e.g. weddings/private dinners).
- Ensure the implementation of new procedures, practices and standards where applicable.
- Keep up to date with current promotions and new products. Monitor trends within the industry and make recommendations for implementation.
- Maintain staffing levels within agreed budgeted targets - controlling wage costs, holiday schedules and work rotas.
- Assist with staff training; departmental inductions, job skills, safety, statutory requirements and development to encourage them to upsell food and beverage, and to continuously monitor and check standards of work and correct when necessary.
- Monitor the standards of work, working practices, productivity and standards of customer care of all employees within the department.
- Actively encourage and manage the development of the staff through appraisal, review meetings, etc. to deliver the overall business objectives.

- Experience of working within a hotel or restaurant/bar operation, ideally in a 4 star environment.
- Able to deliver excellent customer service at all times and train others to follow a similar example.
