Position Overview:
As a Chocolatier at Win-Win, you will play a key role in shaping the future of sustainable, ethical alt-chocolate. Working within our R&D team, you’ll be at the forefront of crafting innovative alt-chocolate products that mirror the taste, texture, and performance of cocoa-based chocolate. This hands-on role combines traditional chocolate-making expertise with a passion for exploring new possibilities, as you adapt classic techniques to our alternative ingredients.
You’ll collaborate closely with the NPD Manager and other R&D team members to prototype, refine, and perfect recipes. From fine-tuning flavour profiles to optimising processes for scale-up on conventional chocolate machinery, your skills will help bridge the gap between artisanal craft and cutting-edge innovation.
As a strong team player, you’ll also contribute to creative product ideation and troubleshooting by sharing your insights into current chocolate and market trends. Whether experimenting with new ingredients, meeting customers to showcase our products, or supporting manufacturing trials, you’ll help bring bold concepts to life and set new benchmarks for delicious and ethical alt-chocolate.
Roles & Responsibilities:
This is a full-time, on-site role, located at our vibrant office in the center of East London (Hackney Wick), in which you’ll:
- Develop and refine alt-chocolate recipes, ensuring exceptional taste, texture, and performance in applications.
- Provide expert insights to support the NPD team in recipe development, prototyping, and scaling up new products for commercialisation.
- Collaborate with the Operations team to provide technical insights during production trials and scale-up projects.
- Support the Sales & Marketing team by creating samples, developing applications, and delivering product demonstrations.
- Research and procure high-quality ingredients that meet product and sustainability requirements.
- Take responsibility for maintaining a clean, organised, and food-safe kitchen space.
- Work closely with production assistants, coordinating their duties and workload to ensure smooth operations.
- Attend trade events and client meetings to provide technical expertise and represent Win-Win’s innovative approach to chocolate.
Requirements:
If you are a skilled chocolatier with a passion for innovation and a drive to create delicious, ethical alt-chocolate, we want to hear from you! Ideally, we’re looking for:
- Significant experience in a chocolatier, chocolate production, or pastry chef role, typically 5+ years, with at least 2 years focused on new product development (NPD).
- Experience in creating and producing commercial chocolate products, supporting NPD teams, refining recipes, and successfully bringing new products to market.
- End-to-end chocolate-making experience, such as bean-to-bar production, with a solid understanding of chocolate’s constituent parts and the overall chocolate-making process.
- Proficiency in both hand and machine tempering, as well as expertise in techniques such as moulded bars, truffles, coated biscuits, panned goods, pastries, baked goods, ice creams, and desserts.
- Familiarity with professional chocolate production equipment, including tempering machines, melangers, grinders, and ball mills.
- Strong creative skills with the ability to think innovatively and explore new approaches in product development.
- Organised and efficient, with strong project management skills to handle tasks effectively.
- Eligible to work in the UK, with the ability to work onsite at our HQ in East London.
