About Win-Win

We're creating cocoa-free chocolate that looks, melts and tastes like the real thing, while avoiding the ethical, social and environmental issues linked to cocoa. We use low-carbon, abundant ingredients, proprietary fermentation and standard chocolate manufacturing equipment to make award-winning Cocoa Free Choc buttons for B2B partners.

The role

You'll work closely with our Head of Chocolate to develop and refine our cocoa-free chocolate products/recipes — from early-stage testing through to scalable, signed off products. This is a hands-on, practical role with significant lab time, requiring a sharp palate, a methodical approach to troubleshooting, and a genuine passion for getting texture, flavour and functionality right. You'll maintain high food hygiene standards on site and keep clear, detailed records of your work. This is a part-time role, working Monday to Wednesday.

What you'll do

  • Develop and test Cocoa Free chocolate recipes, with a focus on flavour, texture and product aim
  • Use your pastry knowledge to tweak and improve recipes, working closely with the Head of Chocolate and Operations to fulfil the brief
  • Maintain food hygiene and safety standards on site, including HACCP compliance
  • Keep accurate documentation, batch records and development notes
  • Work closely with other departments to manage deadlines, stock levels and bespoke requests

What you'll bring

  • A background in pastry — professional pastry chef experience or formal pastry training is strongly preferred
  • A strong intuition for texture, flavour and technique, with the ability to translate that into repeatable, scalable recipes
  • A methodical approach to problem-solving and troubleshooting
  • Experience maintaining food safety standards; HACCP knowledge is an advantage
  • Chocolate experience is a nice to have but not a requirement — curiosity, the right attitude and a willingness to learn matters more
  • Clear, detailed record-keeping habits and a collaborative working style

This role is based in our London lab and office. You'll be on site Monday to Wednesday each week.
