Combining sustainable practices with a pride and passion for the tradition of ‘scratch baking’, Lottie Shaw’s continues to bake award-winning seriously good treats with the authentic taste of Yorkshire home baking.

Since April 2024 Lottie Shaw’s has joined the Jacksons’ and William Jackson Food Group’s family, bringing two family-run, Yorkshire businesses together. It’s an exciting time to join our craft bakery!

What’s involved?

You will be responsible for developing, managing and maintaining the systems for customer specifications, raw material specifications and packaging specifications to ensure compliance with customer requirements.

You will be knowledgeable regarding all the key format for customer and own label specifications, converse with current labelling legislation and familiar with the requirements of customer codes of practice.

You will work closely with the Technical, Sales, NPD and the Operations teams to obtain the required information. You will liaise with suppliers and customers as required.

Key Areas of Responsibility:

Customer and own label specifications:

  • Prepare customer specifications from information provided for new or updated products and at customer request utilising various software packages including online systems.
  • Prepare own label pack copies which are used for mandatory legal information, and for generation of artwork.
  • Internal specifications for factory use.

Raw Material Specifications:

  • Maintain raw material and packaging specification files – request specifications from suppliers, ensure signed off, maintain electronic files etc.
  • Manage Valid IT and insite; pesticides and countries of origin.

Recipe System:

  • Maintain recipe systems – Input into ERP system, review Recipe System Database.

Crisis Manual:

  • Maintain relevant sections of the Crisis Manual.

Packaging:

  • Prepare pack copy for retail packaging and review pdfs for approval.
  • Ensure designs meet legal and Jacksons standards.

General:

  • Creation reports, answering specific e-mail queries as required at the customer’s request.
  • Any other duties as requested by your line manager.

Qualifications and Experience

  • Ideally you will have a degree or equivalent level in a food related, bakery, science or engineering biased discipline.
  • You will have extensive working knowledge of food manufacturing and particularly experience of compiling customer specifications
  • Intermediate / L3 Food Safety or above
  • Intermediate / L3 HACCP or above
  • Detailed knowledge of current labelling legislation.
  • Customer facing experience.
  • Computer Literacy Skills – ability to use software programs operational within the Company.
  • Ability to prioritise and meet deadlines
  • Experience of online specification systems.
