We are seeking a talented and driven Sous Chef to lead and support our food truck kitchen, operating as part of an iconic pub destination on the shores of Loch Ness. WildLand is a company with nature at its heart, a vision that is expressed in every touchpoint for our guests. Our food is no exception. With access to the finest local produce from the sea to the hill, our focus is on providing exceptional food in its simplest form using fresh, local and sustainably sourced ingredients. This role will see you embodying this ethos in supporting our Head Chef in the delivery of honest food with provenance at the core.

Working closely with our Head Chef, you will take ownership of the food truck operation, delivering high‑quality, creative dishes at pace while maintaining the refinement expected.

The Role

  • Support and implement the Head Chef’s culinary vision within the food truck concept, exemplifying the WildLand model of teamwork
  • Lead day‑to‑day food truck operations with precision and pace
  • Deliver consistently high‑quality dishes in a high‑volume setting
  • Maintain exceptional food safety and hygiene standards
  • Manage prep, stock control, and ordering — mindful of our Highland location
  • Build strong relationships with local suppliers to champion the best seasonal produce
  • Supervise and motivate junior chefs, fostering a “one team” kitchen culture
  • Adapt menus to accommodate dietary requirements and guest preferences

Who You Are

Ideally, you’ll be an experienced Sous Chef or strong Chef de Partie ready to step up, coming from a background in street food, gastro pubs, or quality high‑volume kitchens with a twist! You’ll be passionate about local, sustainable Scottish produce and great at communicating this with our visitors. You’ll be calm and organised under pressure, hands‑on, energetic, and solutions‑focused. Most importantly, you’ll embody our WildLand values of being a natural team player who thrives in a close‑knit kitchen.
