The Role

WildLand is emerging as a new voice in hospitality. We are continuing to establish a culinary team of chefs as our multi-faceted hospitality portfolio continues to expand into casual outdoor dining and personal chef experiences, all whilst developing our unique food offering in our Sutherland region.

Set in stunning locations, with the world-renowned Scottish living larder at your disposal, we offer an inspiring work environment and lifestyle, which blends tradition and rich history with contemporary kitchens of the highest specification.

Respect for the quality of our seafood, game and livestock is the cornerstone of our work, and we pride ourselves on cutting edge recipes that combine simplicity with excellence and which eschew excess frivolity. You can expect open fire cooking, outdoor bothy BBQ, family style dining, seasonal highlights, and all with a focus on local and seasonal produce.

We take pleasure in finishing and serving our food to the discerning guests who choose to stay at WildLand, and we get the time to really excel at what we do. Our Chef team is a close knit, supportive group that is growing and is as committed to each other and to our health and wellness as we are to providing the best experiences for our small groups of discerning guests.

Your role is to support the development of the culinary experience aligned with the overall WildLand and Hope concept and brand, reflecting and integrating our Conservation ethos and story. You will work in partnership with the Hope Head Chef and the wider Sutherland regional chef team.

As a team player you will demonstrate our values and align with our Purpose, Vision and Brand, as well as the behaviours of One WildLand Team and One Wild Way.

Who you are

Preferably you are an experienced Sous Chef with a proven track record in a high quality, creative and innovative environment who is looking for your next challenge. You will have experience in fine dining or as a private chef, capable of producing memorable culinary experiences for up to 50 people. Someone who responds positively to short notice dining requests and special events. Passionate about your craft and be ingredient led in your cooking. A supportive team player who encourages others regardless of whether you join us for a summer or stay and grow with us long term.
