A DAY IN THE LIFE OF A SOUS CHEF AT THE WESTIN LONDON CITY

What you'll be doing…

Reporting to the Head Chef, you can expect your working day to include the following.

  • Assisting the Head Chef in managing the daily kitchen operations
  • Supervising and coordinating all activities of the kitchen team, ensuring efficient workflow and adherance to recipes and standards
  • Oversee food preparation, cooking and presentation to maintain the highest quality standards
  • Ensure compliance with health, safety and hygiene regulations
  • Collaborate with the Head Chef in creating and updating menus that reflect seasonal ingredients and culinary trends
  • Develop and test new recipes, ensuring they meet the hotel's standards for taste, presentation and cost
  • Provide input on menu pricing and portion control
  • Train, mentor and motivate kitchen team members, fostering a positive and professional work environment
  • Conduct performance evaluations and provide constructive feedback
  • Assist in recruiting and onboarding of new team members
  • Assist in budgeting and controlling food costs
  • Oversee ordering of supplies

To succeed in the role of Sous Chef, you will need the following qualities and skills:

  • Proven experience as a Sous Chef in a luxury hotel or fine dining establishment
  • Culinary degree or equivalent professional training
  • Strong leadership and management skills, with the ability to motivate and inspire a diverse team.
  • Excellent knowledge of culinary techniques, ingredients, and kitchen equipment.
  • Exceptional organisational and time-management abilities.
  • Strong attention to detail and commitment to excellence.
  • Ability to work under pressure in a fast-paced environment.
  • Excellent communication and interpersonal skills.
  • Proficiency in Microsoft Office and kitchen management software.
  • Food Safety and Hygiene certification is preferred
