Waldorf Astoria London - Admiralty Arch is seeking a Senior Sous Chef to join the pre-opening team for this highly anticipated new luxury hotel opening later this year. This is a unique opportunity for an experienced luxury hospitality leader to join the founding team and help shape the guest experience at this landmark hotel.
Located at the end of The Mall opposite Buckingham Palace, Waldorf Astoria London - Admiralty Arch will feature 100 elegant rooms and suites and 17,500 sqft of private residences. The hotel will open with two signature restaurants - Coreus by Clare Smyth and Café Boulud by Daniel Boulud - bringing together two of the world's most celebrated Michelin-starred chefs. Guests will also enjoy a world-class spa, state-of-the-art fitness facilities, and a collection of grand event spaces, including a ballroom for up to 320 guests.
As Senior Sous Chef for Coreus Restaurant, you will be instrumental in defining the culinary identity of this iconic new hotel. Working alongside visionary culinary leaders, you will contribute to innovative menu creation, inspire and mentor a world-class kitchen brigade, and ensure the delivery of consistently exceptional dining experiences. You will also take a key role in food cost and labour management and operational excellence. Specifically, you will be responsible for performing the following tasks to the highest standards:
- Contribute creatively and strategically to menu development in Hotel Restaurant Kitchen.
- Manage all aspects of the Hotel Restaurant Kitchen including operational, quality and administrative functions.
- Lead, train, and motivate the Coreus kitchen brigade to cultivate an organised, inspired, and high performing team.
- Ensure uncompromising quality, consistency, and presentation of all dishes.
- Support the Coreus Head Chef in managing staff resources and training.
- Overseeing guest relations and seamlessly deputising in their absence to ensure a consistently elevated culinary experience.
- Manage staffing resources and rotas to meet business needs efficiently.
- Uphold brand standards through ongoing training, coaching, and assessment.
- Maintain robust food cost controls to support F&B revenue targets.
- Work collaboratively with other departments to enhance the wider guest experience.
- Ensure full compliance with food hygiene, safety regulations, and best-practice standards.
