The Role
This is a fantastic opportunity for an ambitious, driven individual to make their managerial mark in London's most exciting new immersive attraction. Wake the Tiger have built an incredible Bar and Kitchen set in their new attraction: Absurd City. It will serve everything from cocktails to coffees throughout the day to ticket holders, and we have partnered with a chosen caterer to deliver a high-class meat-free menu in a fully kitted out commercial kitchen. That’s not all though: It will also be open to the public in its own right and has set the goal of being an essential cocktail bar destination in London. We are looking for someone to realise the venue’s ambition and shape it further. You will be supported by an Assistant Manager and a newly minted bar team, and report to the Head of Operations. You will oversee the running of the bar and work with the kitchen team to ensure the venue is a critical and commercial success.
You Will be Responsible For
- Overseeing the delivery of consistent, outstanding hospitality establishing Absurd City’s Bar & Kitchen as a top venue to visit in London.
- Working closely with the Kitchen manager to ensure slick service and impeccable standards are maintained.
- Leading, managing and developing the F&B team, creating a positive, high-performing and inclusive culture through effective recruitment, onboarding, training, regular feedback, performance management and ongoing development.
- Ensuring the team is effectively scheduled and deployed to meet operational requirements, maintaining appropriate staffing levels while balancing guest experience and commercial performance.
- Control of every facet of the financial operation and lead decision-making to make the venue commercially successful.
- Collaborating with other departments, stakeholders and partners to facilitate the smooth running of the venue.
- Establishing and maintaining efficient systems and processes to navigate all logistics and operations.
- Ensuring high standards of health & safety, food safety, licensing and other relevant compliance requirements are understood and maintained across the operation.

- Strong experience of leading fast-paced hospitality in a large scale food and beverage establishment.
- Comprehensive experience working with cocktails and a passion for the hospitality industry.
- Inspirational leadership with clear and confident communication skills.
- Proven track record in managing relationships and an ability to work collaboratively with all stakeholders.
- A strong attention to detail, comfortable building rotas and managing priorities.
- Analytical skills to make sound, informed decisions and detailed reports.
- A personal license and a full knowledge of all necessary H&S compliances in a commercial food and beverage setting is essential.
- Experience working in an immersive setting is desirable.
