Dough Religion area new-school slice joint with an old-school obsession for great dough. Serving up 18-inch New York-style pizzas, layered with bold, \’craveable\’ flavours and crafted with premium ingredients from the UK and Italy, Dough Religion is here to shake up the city’s pizza scene. We’re looking for a proven Sous Chef with experience leading successful kitchen teams and working with fresh dough.

Is responsible for running the kitchen day-to-day, motivating the team through service, and ensuring food quality is consistently at the highest level. This is a hands-on leadership role, balancing kitchen operations, training, and administration.

  • Run a smooth, consistent service in a busy, high-volume environment.
  • Motivate, train, and manage a team of chefs, ensuring high performance and low staff turnover.
  • Oversee preparation and handling of fresh dough, ensuring consistency, quality, and adherence to brand standards.
  • Manage stock levels, place orders, and build strong supplier relationships.
  • Complete rotas, kitchen paperwork, HACCP, and all health & safety requirements accurately and on time.
  • Maintain Dough Religion’s standards for food presentation, consistency, and flavour.
  • Take full control of the kitchen when required, acting as a reliable second-in-command.

  • Consistency of product: Fresh dough and menu items delivered to standard every time.
  • Team performance: Staff retention, morale, and training effectiveness.
  • Operational efficiency: Smooth running of day-to-day service with minimal disruption.
  • Gross profit &cost control: Meeting kitchen GP% targets and reducing wastage.
  • Compliance & paperwork: Hazard Analysis and Critical Control Point (HACCP), cleaning schedules, and audits completed on time with no critical issues.
  • Progression & growth: Readiness to take on more responsibility as Dough Religion expands.

  • An experienced Sous Chef or senior Chef de Partie with a strong track record in fresh dough (pizza, bread, bakery, or similar).
  • Passion for bold flavours and quality-driven food.
  • Successful manager having led successful kitchen teams in high-volume settings.
  • Strong knowledge of food safety, hygiene, and compliance standards.
  • Ability to follow recipes and directions accurately.

  • Strong organisational skills and attention to detail with rotas, stock control, and kitchen admin.
  • A calm, motivated, and hands-on leader who thrives under pressure.
  • Flexibility to work evenings, weekends, and occasional offsite events.
