We’re looking for a proactive and energetic Breakfast Shift Leader to join our Breakfast Management Team and lead the morning service. This role is all about creating a smooth, memorable start to the day for our guests — whether on the floor during breakfast or managing morning In‑Room Dining.
Reporting to the Breakfast Manager, the Breakfast Shift Leader will oversee our morning operation and ensure every guest’s day starts in the best possible way. You’ll be present on the floor, supporting your team through breakfast service, and overseeing morning In‑Room Dining to deliver a seamless, high‑quality experience.

What exactly you will be doing…
- Lead the breakfast service, ensuring smooth operations and exceptional guest satisfaction.
- Oversee In‑Room Dining orders and morning amenities, ensuring accuracy and timely delivery.
- Set up the breakfast area to standard — from buffet presentation to table layouts.
- Run pre‑shift briefings and outline daily shift plans for your team.
- Support and motivate the team, providing training and feedback when needed.
- Engage with guests, resolve issues quickly, and create memorable experiences.
- Drive upselling opportunities and ensure accurate revenue recording.
- Uphold brand standards, Health & Safety, and food hygiene compliance.

What qualities are we looking for?

Must‑haves:
- Current, legal and unrestricted ability to work in the United Kingdom
- Ability to work on‑site at Virgin Hotels Edinburgh for every shift.
- Flexibility to work different shifts, including on the weekends and holidays.
- Availability to work early morning shifts (6am–12pm).
- Previous experience as a Supervisor, Head Waiter, or Senior Server (hotel experience preferred).
- Knowledge of breakfast service and in‑room dining operations.
- Organised, proactive, and calm under pressure.
