We are looking for a committed and hands-on Food & Beverage Supervisor to lead daily operations across our restaurant, bar, afternoon tea, and events services. You will ensure exceptional guest experiences, maintain high service standards, and inspire the team to deliver outstanding hospitality.
ABOUT THE ROLE
- Supervise daily F&B operations, including breakfast, lunch, afternoon tea, dinner, bar service, and events.
- Lead, motivate, and support the team to consistently deliver exceptional guest service.
- Ensure compliance with service standards, SOPs, health & safety, food hygiene, and allergen procedures.
- Coordinate with kitchen, events, and front office teams to ensure seamless guest experiences.
- Oversee outlet preparation, stock control, POS operations, cash handling, and end-of-shift procedures.
- Handle guest feedback and resolve issues professionally and efficiently.
- Drive revenue through effective upselling and strong product knowledge.
- Support inventory management, stocktakes, and operational reporting.
- Maintain high standards of cleanliness, presentation, and equipment care across all F&B areas.
Training and Qualifications
- A basic WSET in Wine & Spirits would be beneficial.
Functional Skills, Knowledge and Experience
- A minimum of 2 years' experience in an establishment of a similar standard, including at least 1 year in a supervisory or managerial role.
- Good knowledge of classical and modern cuisines and wines.
- Good knowledge of condiments and accompaniments.
- Good knowledge of cocktails, spirits, and other beverages.
- Possesses a strong sense of accountability, ownership and responsibility.
- Competent in all setup procedures and service skills as outlined in the main duties and responsibilities.
Social Skills and Experience
- To possess the ability to communicate with guests and staff in order to project a positive image of the Vintry Kitchen and Mercer Roof Terrace.
- The ability to maintain hotel standards of work under pressure.

Vintry Kitchen is a relaxed, all day eatery on the ground floor, serving café-style classics and fantastic vegan and vegetarian dishes, there's something for everyone from morning to night. Wine is central to our approach — close to the hotel, merchant sailors landing from Bordeaux used to store their wines. At Vintry Kitchen, our wine is tapped straight from the large barrels lining the gantry, and can be enjoyed at the bar or with a meal.
MERCER ROOF TERRACE
Mercer Roof Terrace, on the top floor of Vintry & Mercer, takes in the sweep of London's skyline, from the dome of St Paul's Cathedral to the glass tip of The Shard. Here guests can dine al fresco above the city lights. Inside, the atmosphere is warm and convivial, with floor-to-ceiling glass doors opening wide to the night's sky.
