We're looking for a Duty Manager to lead the Restaurant and Bar team on shift, keep the guest experience where it needs to be, and step up to oversee hotel operations when the senior management team isn't on site.

The Role

As Duty Manager for Restaurant and Bar, you'll be the person the team looks to during service and the first point of contact when guests need something sorted. You'll be responsible for the smooth running of the restaurant and bar across all meal periods — coaching, briefing and motivating your team, handling guest feedback, and making sure every shift starts and finishes in good shape.

Restaurant and Bar Leadership

  • Lead and coach the Restaurant and Bar team to deliver consistently great guest experiences.
  • Conduct shift briefings and handovers to keep communication sharp across the team.
  • Supervise daily service across all meal periods, stepping in to support wherever it's needed.
  • Handle guest feedback, complaints and service recovery with confidence and professionalism.
  • Support the Restaurant and Bar Manager with staffing levels, rota management and labour costs.
  • Ensure full compliance with Health and Safety, Food Safety, Licensing, and Allergen legislation at all times.

Commercial Performance

  • Drive food and beverage revenue through upselling, suggestive selling and team engagement.
  • Support stock control, inventory management, ordering and waste reduction.
  • Monitor departmental costs and flag opportunities to improve efficiency and profitability.
  • Help implement promotions, seasonal menus and special events.

Operational Excellence

  • Maintain accurate records and complete all required operational checks and documentation.
  • Ensure cash handling, key security and end-of-shift procedures are completed correctly and consistently.
  • Work closely with the Kitchen, Reception and Housekeeping teams to keep the guest journey seamless throughout the hotel.
  • When the Operations Manager and General Manager are off site, you'll be the one holding it all together — providing guidance to all departments, responding to operational issues, and upholding company standards across the hotel.

Working Hours

This role operates across a 7-day-a-week, 365-day-a-year operation, and your shifts will include a mix of early mornings, evenings, late nights and weekends. We'll make sure you always know your schedule in advance.

Supporting Your Hospitality Career Growth

  • Fully funded apprenticeship programmes.
  • Internal development programmes, designed to support you as you grow within your role.
  • Monthly and annual team member service awards, making sure your achievements are recognised and celebrated.
