Responsibilities

  • Overall management of the kitchen operation reporting into the Executive Chef and working closely with the Chef Director.
  • Manage 6 Sous Chefs and a wider kitchen team of 23.
  • Prepare and oversee all preparation of food to the highest standard.
  • Ensure that all appropriate ingredients are available for the menus.
  • Develop and plan menus that are in line with client and customer expectations.
  • Be creative when menu planning and including the client and customers.
  • Pride yourself on food quality and hygiene standards.
  • Provide feedback and coaching on performance.
  • Ensure that the kitchen team has completed up-to-date COSHH and Food Hygiene training.
  • Plan and prepare fresh food menus daily, aware of current food trends in London.

Qualifications

  • Previous experience managing a large team in a fast-paced environment providing fresh food daily.
  • Previous experience in contract catering would be advantageous.
  • Passion for providing creative, fresh food menus daily.
  • Knowledge of current food trends in London.
