V.Ships Leisure is looking for a Bar/Wine Waiter for Hebridean Sky & Island Sky cruise vessels on behalf of Oceanic Leisure. The MS Hebridean Sky and MS Island Sky are sister vessels. These 118-passenger, all-suite ships are considered among the finest small cruise vessels in the world, offering unusually spacious accommodation, public areas, and outside decks.
As a Bar/Wine Waiter, you will be responsible for all wine and beverage service, along with daily duties such as cleaning, organizing, and maintaining sanitation standards. You must ensure that all areas and equipment are cleaned and maintained in accordance with USPH standards. Additional responsibilities include assisting with the training of new crew members and maintaining safe, professional, and respectful conduct at all times.
Key Responsibilities- The Bar Waiter is the assistant to the Bartender.
- Efficient day to day service of bar food and beverage items, including ensuring an efficient and cost-effective bar service operation.
- Assisting the Bartender in achieving the lowest possible beverage cost and minimum ullage while preparing and serving drinks for passengers, officers and crew to a quantity and standard that ensures customer satisfaction across all areas.
- Preparing and serving bar orders to achieve efficient consumption analysis against the beverage cost.
- Checking beverage quality and reporting rejected items to the Bartender.
- Adhering to bar routines, section plans and rotations in accordance with operational needs and the Maritime Labour Convention.
- Correct handling and preparation of beverage items and ready to eat products to ensure the highest standards of food hygiene, food safety and food and drink presentation at every stage.
- Meeting the specific dietary needs of passengers, officers and crew.
- Ensuring effective communication and teamwork between the bars team and other departments.
- Reporting maintenance defects in line with company policies and procedures.
- Supporting the Bartender with effective complaint resolution.
- Correctly setting up onboard cocktail parties, wine tastings, renewal of vows, seminars, turnaround functions and events.
- Promoting bar beverage sales.
- Assisting the Bartender with stock takes in accordance with company policy and procedures.
- Assisting with additional duties, including embarkation, disembarkation, gangway duties, storing, light luggage, wheelchair assistance, cocktail parties, cocktail and canapé service in the bars and refreshment service during tour despatch and return.
- Ensuring cleaning standards and schedules for the bar area, pantry, refrigerators, ambient store cupboards and ice machines are adhered to and logs maintained in accordance with United States Vessel Sanitation Program and EU SHIPSAN procedures.
- Effective participation in garbage duties to ensure safe disposal and environmental compliance in accordance with company policy and procedures.
- Valid STCW95 certification.
- Minimum of 4 years experience in a similar position with a minimum of 1 year as Entremetier, Gardemanger or Poissonier at an International 5 star establishment.
- Good knowledge of International and European cuisine.
- Knowledge and experience of Public Health policies and procedures.
- Ability to read, interpret and demonstrate culinary fundamentals.
- Demonstrates strong knife skills.
- Must be proficient in all stations in the galley.
- Physically and medically fit.
- Moral integrity is required.
- Excellent fluent English (verbal and written).
English is the working and safety language on board Silversea vessels. This also includes the ability to give and receive instructions in verbal and written forms and to effectively and efficiently engage with guests and crew members.
