V.Ships Leisure is looking for a Chef De Partie Pastry on behalf of Mitsui Ocean Cruises. The Chef de Partie Pastry & Bakery will be supervised by the Chief Pastry & Bakery Chef in the Pastry and Bakery Galley section, and will assist in the preparation, production, and service of high‑quality pâtisserie, dessert and ice creams for our guests, ensuring that recipes and presentations are followed accurately while maintaining company standards.
Completes all tasks as mandated by the direct Supervisor, such as enforcing all sanitation and USPH standards in the assigned areas of work, proper food preparation (washing, sterilizing, peeling, prepping), maintaining organization of work area, store and chambers, assists with proper food preparation, possesses basic confectionery and baking skills (sponge cake, shortcake, puff pastry, white bread, etc.), possesses basic Japanese food preparation skills for sweets and confectionery.
Key Responsibilities- Attends daily team meetings to communicate goals, expectations, and any operational updates as directed by the Executive Chef.
- Under the direction of the Chief Pastry & Bakery Chef, accurately follows Pastry and Bakery production schedules.
- Participates in a positive and collaborative work environment, teamwork.
- Under the direction of the Chief Pastry & Bakery Chef, supervises Pastry Team members.
- Deputises for the Chief Pastry & Bakery Chef in their absence.
- Reviews all recipe and menu cards prior to commencing MEP.
- Undertakes Pastry and Bakery production ensuring that all MEP preparations are executed accurately, and the correct methods of cookery employed.
- Continually checks that recipes are being followed.
- Ensures that production levels are adhered according to the production schedule, minimizing food wastage.
- Communicates any concerns or issues with the direct Supervisors in a timely manner to the Chief Pastry & Bakery Chef.
- Adheres to food safety and sanitation protocols in compliance with industry and company standards and local port Health regulations such as USPH.
- Ensures all temperature logs, blast chill, hot and cold holding, transport logs are completed.
- Ensures that equipment, tools, utensils, and hard surfaces are cleaned and sanitized per regulations.
- Maintains all food storage areas to ensure food is stored and labeled correctly.
- Addresses non‑compliance matters immediately with the Chief Pastry & Bakery Chef.
- Assists with service line set‑ups.
- Ensures efficient product delivery and actively assists with plating and garnishing dishes as directed by the Assistant Pâtissier.
- Communicates any issues accurately and in a timely manner.
- Ensures that all mise en place preparations are carried out accurately in line with recipe card specifications, minimizing food wastage.
- Adheres to the Pastry and Bakery production schedules as directed by Chief Pastry & Bakery Chef.
- Ensures that accurate portion control measures are followed.
- Participates in ongoing on‑the‑job coaching and training, assisting with skills development.
- Attends all scheduled training as directed by the Executive Chef and studies and investigates Pastry & Bakery trends, techniques, and emerging technologies.
- Ensures all company regulatory standards and regulatory matters related to the galley personnel are adhered to.
- Assists all galley crew members in implementing additional or increased sanitation procedures or levels in response to outbreak incidents.
- Attends all Shipboard emergency drills and training as directed by the Ship Safety Officer.
- Collaborates with all crew members and Officers to ensure compliance with the companies’ environmental vision and policies.
- Maintains a positive, effective, and respectful working relationship with co‑workers, supervisors, managers, and officers within and across department boundaries.
- Adheres to ship’s relevant health & safety procedures as required.
- Upholds and displays high standards of professionalism, integrity, honesty, attendance, punctuality, and personal appearance.
- Performs other duties as required.
- Languages: Fluent English.
- Education: High school degree or related. Culinary training mandatory.
- Previous professional experience: 2 years in a similar capacity in a luxury culinary environment.
- Shipboard experience: Not required but preferred.
- Valid STCW certificates.
- Valid Pre‑Employment Medical.
- C1D visa mandatory for all positions.
- Attained tertiary qualifications in Pastry Arts from an internationally recognized institution.
- Minimum of 5 years’ experience in Pastry and / or Bakery production establishments / hotels, in a DCDP Pastry & Bakery position.
- Restaurant experience with Cruise Lines is highly regarded.
- Experience in the production of frozen desserts—Gelato, ice cream, sorbet, sherbets, granites—utilizing fresh ingredients and convenience products.
- Demonstrate a basic working knowledge of food safety and sanitation protocols, and Public Health standards.
- Knowledge of food products, food production, basic food preparation, food handling and presentation.
- Ability to follow written and verbal instructions.
