The Academy Sous Chef will work alongside the Academy Head Chef in providing food production services and kitchen operations in the Academy; the Centre for Food, Drink and Culture, through supporting and guiding the kitchen teams and students in consistently delivering quality, variety of food and menus on offer to customers to the agreed standards. The Sous Chef will assist in managing the operations of the kitchen in the absence of the Head Chef.
About You
- Hold A levels, BTEC HN/C in Professional Cookery, NVQ3, City & Guilds Level 3 or any other qualification relevant to the post.
- Experience as a Junior Sous Chef or Chef de Partie in a food and beverage setting offering a range of high-end dining experiences, including restaurant and banqueting service.
- Experience of high-end kitchen operations, including personnel management, seasonal menu design, food planning and preparation, sanitation, health codes and security, as well as tracking stock levels of food, supplies, equipment and forecasting needs.
