Kitchen Lead - job description
Gwynant Ltd | Β£16.50 per hour | Seasonal | Full-time | Flexible hours | Accommodation may be available locally
Are you passionate about good food, enjoy working as part of a busy team and love being outdoors in a stunning mountain setting?
We are looking for Seasonal Kitchen Leads to join our catering team for the 2027 season. You`ll work in our Cegin outlet on Llyn Gwynant Campsite, which serves pizzas, gourmet burgers and breakfasts, and in our remote preparation kitchen, helping us deliver great food and excellent service to our campsite guests and visitors.
1. Working pattern
Kitchen Leads share responsibility for the catering operation, typically undertaking five lead shifts per week. On occasion, you may need to work a split shift or assist with general warden duties.
2. What you`ll be responsible for
- Food safety and compliance: Follow Gwynant's documented HACCP system at all times and ensure the associated paperwork and SFBB app are kept up to date.
- Food allergens: Ensure all team members understand and follow Gwynant's allergy policy.
- Team leadership and guest experience: Help create a positive working environment where team members are properly trained and confident in a busy catering setting. Encourage friendly, welcoming and helpful interactions with customers.
- Communication and coordination: Communicate effectively with other Kitchen Leads and the wider team. Help ensure that new starters, processes and policies are introduced clearly, and that stock management, rotation and labelling are maintained.
- Ordering and supplies: Assist the Catering & Food Operations Manager and SMT with supplier ordering as required.
- Organisation and use of time: Help the team make productive use of each shift. Keep cleaning schedules on track, encourage clean-down tasks to begin before service ends, and use quieter periods for tasks such as deep cleaning, defrosting ingredients for the next service and food labelling. Ensure time-sensitive tasks are completed promptly, and that packaging, firewood and other supplies are ready for breakfast and evening service.
- Food quality and consistency: Make sure food prepared by the kitchen team is consistently produced to a high standard.
- Waste management: Ensure the team follows best-practice minimal-waste procedures, including checking that food is correctly labelled, portioned before freezing where applicable, and defrosted in suitable quantities according to expected customer numbers and company guidance. These practices help reduce food waste and waste-collection costs.
- Health, safety and uniform: Ensure the team follows health and safety policies and wears the correct uniform.
3. Who we`re looking for
- Proven experience in retail, catering or bar work
- Experience using point-of-sale systems; we use Lightspeed X-Series
- Thorough knowledge of food allergens and food safety protocols
- Strong leadership and communication skills
- The ability to adapt and work effectively in a fast-paced, high-pressure environment
- Willingness to work evenings, weekends, school holidays and bank holidays
- Food safety and alcohol-sales certifications are advantageous
- Familiarity with Excel, Outlook and Word
- A driving licence is preferable
4. The role in brief
This is a shared, hands-on leadership role, supporting the Catering & Food Operations Manager. You`ll help keep service running smoothly, support and develop the team, protect food safety and quality, and contribute to an organised, efficient and welcoming catering operation.
5. Interested?
If helping to run a busy food operation, working with a great team in a beautiful place and helping us build something wonderful sounds like your kind of job, we`d love to hear from you.
