To assist Head Chef in the preparation and service of food, ensuring that the highest quality, hygiene and service standards are met and maintained at all times in line with our guests' expectations. High-quality informal brasserie-style dining at the clubhouse is central to the golf experience. Quality grab-and-go options before and during play, along with fast, hearty, quality breakfast menus form an important part of the clubhouse offering. More refined dining at MacLeod House including breakfasts require the development, preparation and delivery. This role is central to day-to-day operations and requires a high level of culinary ability, as well as organisational skills. The role operates on a shift-based system including weekend working in line with the seasonal needs of the business.

Key Duties & Responsibilities:

  • Under direction of the Head Chef manage and deliver hot and cold food for breakfast service to the highest standard.
  • Running sections of the kitchen during service.
  • Ensuring a consistently high level of food service at all times through knowledge of menu items and awareness of commodities used, preparation, methods and cooking.
  • Assisting as necessary with stock control and identifying methods for improving food service.
  • Ensuring kitchen areas and equipment are cleaned and relevant health and hygiene procedures are followed at all times.

Qualifying Criteria:

  • Experience of working in a similar role within a high quality establishment and ability to produce quality food to the highest standard.
  • Ability to run and maintain breakfast service.
  • Current certificate in Basic Food Preparation, Health and Hygiene or similar.
  • Excellent communication skills.
  • Driven with a passion for food and quality produce.
  • Creative with a meticulous eye for detail.
  • Ability to work in a fast paced and challenging environment and maintain a consistently high standard of food delivery under pressure.
  • Positive and flexible approach to work (weekend and evening work will be required).
  • Proof of eligibility to work in the United Kingdom.
