POSITION PURPOSE To monitor and challenge all costs and purchasing across the resort ensuring key performance indicators are met and profits are maximized. Assisting the wider Finance function as and when required.
ESSENTIAL FUNCTIONS
- Analyze the Food & Beverage Costs across multiple outlets
- Review and report menu engineering and pricing
- Stock takes as required for Food, Beverage and Retail
- Maintain pricing and content of the POS systems
- Maintain the integrity of the Purchasing system by updating supplier pricing, reviewing open purchase requests and orders and also reporting and escalating ageing items
- Audit operations on delivery of service - spot check dishes, monitor buffet costs and wastage.
- Develop and review par stocks and ensure adherence to policies and procedures
- Provide cover for the Finance Assistant positions - Accounts Payable, Accounts Receivable and Income Audit
- Ad hoc Finance duties as and when required
CANDIDATE SPECIFICATION
- Qualified to degree level
- Cost-controller experience required
- Self-motivated and able to manage own workload
- Able to communicate and challenge effectively across all levels of the business
- Organized and methodical
- Intermediate user of a spreadsheet package
- Previous experience with Micros is preferred
- Experience in a Purchasing or Cost Control function is preferred (Full training will be given)
