About the Role:
Key Responsibilities:
- Assist the Head Chef with the hiring needs of the kitchen and BOH staff.
- Oversee all the production of menu items according to standards.
- Review the station production sheets to ensure production is in relation to sales.
- Maintain functional relationships with all senior management and service personnel.
- Ensure unit is fully compliant with Health & Safety, Fire Safety, COSHH, Food Hygiene legislation etc.
- Maintain professional and compliant records of all testing and test results completed in your department.
- Provide full co-operation to any colleague requiring assistance in a prompt, caring and helpful manner.
- Display a professional, caring and anticipative attitude and approach to your work, colleagues and guests at all times.
- Schedule the hourly staff in relation to forecasted sales.
- Maintain labour controls and respond to any change in sales.
- Maintain accurate food inventories and rotate food as needed.
- Check weekly inventories for accuracy.
- Manage all weekend transfers and cost sheets (food to bar, staff meals, promotional expenses etc).
- Maintain the kitchen recipe book and manage production, quality and consistency through its use.
- Correctly fill out necessary paperwork on a timely basis for any accidents that occur in your unit.
- Schedule regular cleaning of kitchen equipment to ensure its safe, sanitary operation and to achieve its maximum operational life.
