Tonic are pleased to partner with our client to recruit a Head Chef for their Neapolitan pizza restaurant in Bristol. This is a kitchen that obsesses over the details, from dough fermented fresh every day to a bake of around 60 seconds, and every pizza on the pass has to be right. You'll take full ownership of the operation, leading and developing the team, running prep, service and close, and keeping the kitchen commercially sharp on labour, waste and stock. Working side by side with the General Manager, you'll set the standard for food safety, allergen management and kitchen culture. This is a role for a hands-on leader who knows their pizza and wants a kitchen people genuinely enjoy working in.
What are we looking for from Head Chef candidates?
Experience as a Head Pizzaiolo, Senior Pizzaiolo or Senior Sous Chef in a high-volume kitchen
Deep technical knowledge of authentic Neapolitan pizza, including dough and fermentation (essential)
A track record of leading, motivating and developing a busy kitchen team
Commercial awareness, comfortable managing labour, waste, stock and ordering
Excellent food safety and allergen knowledge
Calm, organised and confident when service is at its busiest
Genuine care for the product, the team and the guest experience
