The Head Chef Role
This is a pivotal role for a Head Chef to build and lead a brigade of 20–25, drive all kitchen operations, and deliver an exceptional food experience.
- Develop and execute menus in collaboration with Greek consultant chefs and the group’s Head of Food.
- Manage a high-volume kitchen with Robata grill and wood-fired oven, serving up to 600 covers daily.
- Lead recruitment and training for the new brigade, fostering a culture of excellence.
- Ensure impeccable standards for both à la carte and private dining events.
- Drive kitchen profitability and achieve monthly performance targets.
The Ideal Head Chef Candidate
- Proven experience as a Head Chef in a premium, high-volume restaurant environment.
- Strong background in high-end Mediterranean, Greek, or live-fire cooking is highly advantageous.
- A natural leader with the ability to recruit, train, and inspire a large team.
- Commercially astute, with experience managing kitchen financials and KPIs.
- Flexible and hands‑on, comfortable with initial training periods and a fast‑paced launch environment.
