The Role – Sushi Demi Chef de Partie

As a Sushi Demi Chef de Partie, you will support the Sushi Chef de Partie and Sous Chef in delivering exceptional sushi dishes that showcase precision, craftsmanship and the finest seasonal ingredients.

The Sushi Demi Chef de Partie will play an important role in the day-to-day operation of the sushi section, assisting with preparation, fish fabrication, sushi rice, mise en place and service while maintaining the highest standards of quality and consistency.

Working within a highly skilled brigade, the Sushi Demi Chef de Partie will continue to develop specialist Japanese culinary techniques, refine knife skills and deepen their understanding of premium seafood, all while contributing to a calm, disciplined and collaborative kitchen environment.

This is an excellent opportunity for an ambitious Sushi Demi Chef de Partie or experienced Commis Sushi Chef ready to take the next step in their career.

What We\'re Looking For

As our ideal Sushi Demi Chef de Partie, you will have

  • Previous experience as a Sushi Demi Chef de Partie, Commis Sushi Chef or similar role within a premium or fine dining restaurant.
  • A genuine passion for Japanese cuisine and sushi craftsmanship.
  • Good knife skills and experience preparing premium seafood.
  • A solid understanding of sushi rice preparation, mise en place and section organisation.
  • Excellent attention to detail with pride in presentation and consistency.
  • The ability to remain calm and organised during busy services.
  • A positive attitude, strong work ethic and commitment to continuous learning.
  • A thorough understanding of food safety, hygiene and kitchen best practice.
