As we continue to grow, we are looking for an outstanding Senior Sommelier to lead and develop our award‑winning wine programme.
The Role
As Senior Sommelier, you will take ownership of one of London's most exciting restaurant wine programmes, working closely with the Executive Chef and senior leadership team to create exceptional guest experiences through outstanding wine service. The Senior Sommelier will lead the sommelier team, oversee the wine cellar, curate an exceptional wine list and ensure every guest receives knowledgeable, engaging and personalised recommendations. Key Responsibilities
- Lead the restaurant's wine programme and continuously develop an exceptional wine list.
- Curate a diverse selection of wines, including rare, premium and exclusive labels.
- Deliver memorable wine service and expert recommendations to guests.
- Create innovative wine pairings in collaboration with the Executive Chef.
- Lead, coach and develop the sommelier and front‑of‑house teams.
- Deliver regular wine training sessions and tastings.
- Build strong relationships with suppliers, vineyards and distributors.
- Manage cellar operations, stock control and inventory.
- Monitor purchasing, margins and profitability.
- Stay informed on emerging wine regions, producers and industry trends.
- Represent Los Mochis as an ambassador for wine excellence.
About You
We're looking for someone who brings:
- Previous experience as a Senior Sommelier or Head Sommelier within a premium restaurant or luxury hospitality environment.
- Exceptional knowledge of global wine regions, producers, vintages and food pairing.
- Strong commercial awareness and experience managing wine costs and profitability.
- Outstanding guest engagement and communication skills.
- Proven leadership experience with the ability to inspire and develop others.
- Excellent organisational skills and attention to detail.
- A genuine passion for hospitality, wine and continuous learning.
- Flexibility to work evenings, weekends and public holidays.
Desirable Qualifications
- WSET Level 3, WSET Diploma or equivalent professional wine qualification.
- Experience opening a new restaurant or developing a wine programme from launch.
- Knowledge of sake would be advantageous.
