We are now looking for an exceptional Head Chef to lead LUNA Omakase and continue delivering one of London's finest omakase experiences.

This is a rare opportunity for an accomplished sushi chef and inspirational leader to take ownership of an elite chef's table while helping shape the future of one of the UK's most exciting hospitality groups.

The Role

As Head Chef, you will be responsible for every aspect of the LUNA Omakase experience.

Leading a highly skilled team, you will ensure every guest enjoys an unforgettable culinary journey defined by exceptional craftsmanship, precision and genuine hospitality.

Working closely with our Executive Chef and wider culinary leadership team, you will maintain the highest standards of traditional Japanese cuisine while continually seeking opportunities to refine and elevate the guest experience.

This is a hands on leadership role requiring technical excellence, calmness under pressure and an unwavering commitment to quality.

The Head Chef will lead by example, inspire their team and create an environment where excellence is simply the standard.

Key Responsibilities

As Head Chef, you will

  • Lead the daily operation of LUNA Omakase.
  • Deliver an exceptional omakase experience at every service.
  • Prepare and present premium sushi and Japanese dishes to the highest standards.
  • Source, handle and showcase exceptional seasonal ingredients with care and respect.
  • Lead, mentor and develop a high performing kitchen team.
  • Foster a positive, collaborative and performance driven kitchen culture.
  • Work closely with the front of house team to create a seamless guest journey.
  • Drive consistency, precision and attention to detail across every service.
  • Maintain exemplary food safety, hygiene and HACCP standards.
  • Manage stock, ordering, supplier relationships and inventory.
  • Control food costs, labour costs and minimize waste without compromising quality.
  • Contribute to menu development, seasonal specials and culinary innovation.

About You

The ideal Head Chef will have

  • Significant experience leading a premium sushi restaurant or omakase counter.
  • Outstanding knife skills and exceptional knowledge of traditional Japanese cuisine.
  • Experience working with the highest quality seafood and seasonal ingredients.
  • Natural leadership qualities with the ability to inspire, coach and develop others.
  • Excellent organisational and communication skills.
  • Experience managing food costs, GP, labour and kitchen performance.
  • A calm, composed approach during high pressure service.
  • An uncompromising eye for detail and consistency.
  • A genuine passion for delivering extraordinary guest experiences.
