LUNA at Los Mochis London City is seeking an exceptional Omakase Chef to join our exclusive 12-seat Omakase counter. This is a rare opportunity for an experienced Omakase Chef to take a leading role in delivering a refined, guest-led dining experience, working with premium seasonal ingredients in an intimate, open-kitchen environment. As an Omakase Chef, you will be at the centre of the experience, leading service, engaging directly with guests, and delivering a precise, elegant, and memorable tasting journey.

About LUNA at Los Mochis: LUNA is a highly exclusive Omakase experience within Los Mochis London City, offering an intimate 12-seat counter where guests are guided through a seasonal tasting menu. As an Omakase Chef, you will be part of a concept that blends traditional Japanese techniques with contemporary creativity, delivering a truly immersive dining experience.

The Role – Omakase Chef: As an Omakase Chef, you will:

  • Lead Omakase service with confidence, precision, and consistency
  • Prepare and present dishes to the highest standard in a live, guest-facing environment
  • Work closely with Executive Head Chef Leonard Tanyag on seasonal menu development
  • Showcase strong Edomae and modern Japanese techniques
  • Handle premium ingredients with care, respect, and technical excellence
  • Create a seamless and engaging guest experience through storytelling and interaction
  • Maintain exceptional standards of cleanliness, organisation, and food safety

What We’re Looking For – Omakase Chef: The ideal Omakase Chef will have:

  • Proven experience as an Omakase Chef or senior chef within a high-end Japanese concept
  • Strong knowledge of Japanese cuisine, ingredients, and techniques
  • Excellent knife skills and exceptional attention to detail
  • Confidence working in a small, high-pressure, guest-facing environment
  • A calm, disciplined, and highly professional approach
  • A genuine passion for Omakase dining and seasonal produce
