The Role – Commis Chef

As a Commis Chef at Ma/Na, you will support the Chef de Partie and wider kitchen brigade in delivering exceptional Japanese-inspired cuisine to the highest standards. Working across different sections of the kitchen, you will assist with food preparation, mise en place and service while developing strong technical skills in a disciplined, collaborative and quality‑driven environment. This is an outstanding opportunity for an ambitious Commis Chef looking to learn from experienced chefs and build a long-term career in fine dining.

Key Responsibilities

  • Prepare ingredients and assist with mise en place across kitchen sections
  • Support the Chef de Partie during service to ensure dishes are prepared consistently and to specification
  • Maintain the highest standards of food quality, presentation and portion control
  • Follow all food safety, hygiene and HACCP procedures
  • Keep your section clean, organised and fully stocked
  • Assist with deliveries, stock rotation and waste reduction
  • Work collaboratively with the wider kitchen team to ensure smooth service
  • Demonstrate a willingness to learn new techniques and continuously develop your culinary skills

  • Previous experience as a Commis Chef or relevant kitchen experience within a quality‑driven restaurant
  • A genuine passion for Japanese cuisine and exceptional ingredients
  • A positive attitude with a strong desire to learn and develop
  • Excellent organization and attention to detail
  • The ability to remain calm and efficient in a fast‑paced kitchen
