We are looking for a talented Chef de Partie (Cold Kitchen) to join our passionate brigade.

This is an exciting opportunity for a skilled Chef de Partie who takes pride in precision, presentation, and producing beautiful cold dishes using the very best ingredients.

Working alongside an experienced leadership team, the Chef de Partie will play an important role in delivering the high standards that define Sale e Pepe Mare.

The Role

As Chef de Partie, you will be responsible for running the cold section during preparation and service, ensuring every dish is prepared with consistency, creativity, and exceptional attention to detail.

Working with premium seafood, Italian antipasti, fresh salads, crudo, carpaccio and seasonal ingredients, you will help create memorable dining experiences whilst maintaining the highest standards of food quality, hygiene, and organisation.

The Chef de Partie will work closely with the Sous Chefs and Head Chef to ensure a smooth service, effective mise en place, and continual development of the section.

About You

We are looking for someone who

  • Has previous experience as a Chef de Partie or strong Demi Chef de Partie within a quality restaurant or luxury hotel.
  • Has experience working on a cold section or Garde Manger.
  • Has excellent knife skills and strong attention to detail.
  • Is passionate about Italian cuisine and premium ingredients.
  • Thrives in a fast-paced, professional kitchen.
  • Works calmly under pressure whilst maintaining exceptional standards.
  • Has excellent organisational and communication skills.
  • Maintains the highest standards of food safety and hygiene.
  • Enjoys working collaboratively within a supportive team.
  • Has a genuine passion for hospitality and continuous learning.

Responsibilities

  • Prepare and present cold dishes to the highest standard.
  • Manage the Cold Kitchen section throughout preparation and service.
  • Ensure consistency, quality, and portion control across every dish.
  • Prepare seafood, antipasti, salads, crudo, carpaccio and other cold menu items with precision.
  • Monitor stock levels and minimise waste.
  • Maintain excellent food hygiene and health & safety standards.
  • Support junior chefs with training and development.
  • Communicate effectively with the wider kitchen team to ensure smooth service.
  • Assist with menu development and seasonal specials where appropriate.
