We at Theobalds Estate Hotel & Spa are a vibrant hotel under a programme of full restoration and renovation, for revitalised launch later in 2026. We are to be the FIRST UK Hotel in IHG's Noted Collection for unique, heritage and luxury hotels. Theobalds is to be known for exceptional hospitality and memorable guest experiences.
Having just launched the revitalised Health Club, we are clear on our vision and pathway for the Hotel's restoration. With plans for a diverse portfolio of food and beverage outlets—including our signature restaurant, a bustling cocktail bar, casual dining spaces, and a busy banqueting calendar utilising the stunning 54 acre grounds and outside catering opportunities—this opportunity sets the standard of quality, creativity, and service.
We are now looking for an inspiring leader as Director of F&B for the site, to take our culinary and beverage operations to the next level. If you thrive on the energy of multi-outlet management and want the creative freedom to make a real impact, we want to hear from you.
As our Director of Food & Beverage, for the 144 room hotel and all outlets on the estate, you will be the driving force behind our entire F&B division. You will move away from rigid, corporate box-ticking and focus on what really matters: empowering your team, delighting guests, and running a profitable business. You will lead the strategic vision for all venues, collaborating closely with our Chef brigades to launch exciting seasonal menus, host standout events, and cultivate a service culture that sets us apart from the competition.
What You’ll Do
- Lead and Inspire: Oversee the operations of our restaurants, bar, room service, and events spaces, mentoring a talented front‑of‑house and kitchen teams, to begin with - recruiting in your phenomenal team to cultivate that success.
- Drive Commercial Success: Take ownership of the F&B budget, forecasting, and P&L, using your commercial sharpness to maximize revenue and control costs.
- Elevate the Experience: Maintain high, consistent service standards across all outlets, ensuring every guest enjoys a premium experience.
- Innovate: Work on exciting drink programs, menu concepts, and seasonal promotions to attract both hotel guests and local diners.
- Ensure Compliance: Keep our operations safe and legal by managing health, safety, food hygiene, and licensing standards.
