We’re now seeking Professional Cookery Apprentices to join our talented and passionate kitchen brigade.
About Hospitality Apprenticeship Scotland
Hospitality Apprenticeship Scotland brings together some of Scotland’s leading hotels to deliver a world‑class, industry‑led apprenticeship programme. Designed to offer young people a clear, exciting pathway into hospitality, the programme develops the next generation of skilled chefs and future hospitality leaders.
Programme Overview
Learn while you earn through a structured 18‑month programme that provides a strong foundation for a rewarding culinary career.
Your Qualification
On successful completion, you’ll achieve a Professional Cookery SCQF Level 5 Diploma, delivered entirely through hands‑on kitchen training. Units are tailored to your workplace and agreed in collaboration with your Executive Chef. There may also be opportunities to progress into an extended apprenticeship, supporting your long‑term growth and development.
What You’ll Learn
Throughout your apprenticeship, you’ll gain real experience in a professional kitchen. Depending on your hotel placement, you may be involved in:
- Developing strong knowledge of health and safety in a busy kitchen
- Learning to work confidently as part of a team
- Handling and maintaining knives safely and professionally
- Preparing vegetables, fish, shellfish, meat, poultry, and game
- Exploring cook‑chill and cook‑freeze methods
- Cooking and finishing a variety of dishes, from fresh breads to classic mains
- Building a strong foundation across preparation, cooking, and finishing
- Supporting sustainable kitchen practices and reducing waste

Who We’re Looking For
Above all, we’re looking for someone with a willingness to learn. No previous qualifications are required — just enthusiasm, professionalism, and a positive attitude.
Requirements
- Aged 16–24 at the start of the apprenticeship
- Basic communication, literacy, numeracy, and IT skills
- Right to work in the UK
- Scottish residency and a National Insurance number

What You’ll Receive
- £12.36 per hour (18+) or £10.30 per hour (under 18) (Rates increase in line with national minimum wage from April 2026)
