The Role

To oversee all Food and Beverage operations in the delivery of an excellent Guest experience and outstanding team performance, resulting in high level rankings across quality and performance metrics.

You will evaluate and act on guest satisfaction influencers, setting departmental targets and objectives that promote the highest levels of Guest satisfaction and departmental results.

Key responsibilities

  • Guest Experience
  • Evaluate Guest satisfaction levels and monitor trends, with a focus to drive forward continuous improvement.
  • Oversee the regular implementation of food and beverage menus and concept development across The Folio Bar & Kitchen, Sage of Cambridge and Room Service.
  • Maintain good communication and working relationships across all hotel areas and with external customers and suppliers.
  • Commercial Performance
  • Direct and oversee all hotel Food and Beverage operations, including but not limited to the Folio Bar & Kitchen, Sage of Cambridge, and Room Service Operations.
  • Operate within departmental budgets through effective stock and cost controls and well-managed schedules; monitor profitability and take immediate corrective action when necessary.
  • Set departmental targets and objectives, work schedules, budgets, policies and procedures.
  • Actively drive growth by generating Sales and Marketing initiatives and leading their implementation.
  • People Management
  • Monitor the appearance, standards and performance of the Food and Beverage team, with an emphasis on development, training and teamwork.
  • Ensure team members maintain up-to-date knowledge of all food and beverage menus, hotel facilities and current offerings.
  • Deliver practical, on-the-job training to the Food and Beverage team, including menu knowledge, service standards and departmental skills sessions.
  • Ensure staffing levels appropriately cover business demands.
  • Ensure ongoing training of the team across hotel general and mandatory subjects, as well as specific departmental skills.
  • Develop and implement programmes which improve retention and job satisfaction.
  • Ensure communication meetings are conducted and post-meeting minutes generated.
  • Recruit, manage and develop the Food and Beverage team, selecting competent personnel.
  • Contribute to succession planning within the hotel and company.
  • Build consensus and negotiate mutually beneficial solutions to problems.
  • Compliance & Standards
  • Ensure team members comply with hotel security, fire regulations, food hygiene and all health and safety legislation.
  • Deliver the product to expected Brand standards and manage the quality assurance process.
  • Ensure the department adheres to hotel policies and procedures.
  • Ensure the department partakes in wider hotel initiatives, including Environmental and Community projects.
  • Ensure competence and efficient delivery of the Hilton Honors loyalty programme and ensure full compliance.
  • Undertake special duties or work outside the normal daily/weekly routine, but within the overall scope of the role, at the request of the General Manager.

Core requirements

  • Proficient numeracy and literacy skills.
  • 3 years' previous experience in a senior management role within a restaurant or hotel.
  • Proven ability to plan menus, manage stock and costs effectively, and create budgets.
  • In-depth knowledge of UK Food Hygiene and Health & Safety Laws.
  • Demonstrable experience delivering hands-on training or coaching to a team in a hospitality or food and beverage environment.
  • Sales and Marketing aptitude.
