HOURS: Full Time, 45 hours per week, 15.30-01.00, 5 days in 7.

ABOUT THE ROLE

The Assistant Head Baker at Daylesford acts as second‑in‑command to the Head Baker, stepping in to lead the team whenever required. In this role, the majority of their time will be dedicated to crafting our award‑winning organic bakery products specifically for the Daylesford Cotswolds Farm shop. This position plays a key part in enhancing freshness, consistency, and availability as we transition to a new shift structure, one that separates production for our London farm shops from the bespoke supply created exclusively for the Cotswolds.

RESPONSIBILITIES

  • Support the Head Baker in leading the night‑shift team to produce Daylesford’s organic breads and viennoiserie for our Farmshops, cafés, and Bamford Collection pubs and hotels.
  • Maintain the award‑winning quality of all Daylesford bakery products and ensure all items are produced to specification.
  • Contribute to the development and rollout of new and seasonal bakery lines, adapting to range changes as needed.
  • Deputise for the Head Baker, overseeing daily production, order processing, and recipe execution.
  • Ensure all ingredients are prepared accurately and that bakery prep is completed professionally and on time.
  • Uphold Soil Association organic standards and all due‑diligence, traceability, and internal audit requirements.
  • Supervise the team to deliver consistently high‑quality products with minimal wastage and efficient completion of tasks.
  • Support the achievement of financial and budgetary goals through efficient production and waste reduction.
  • Assist with team management, including training, development, motivation, and effective communication of recipe or operational changes.
