As Food & Beverage Manager, you will play a key role in the day-to-day running of our food and beverage outlets, including the hotel bar, restaurant, banqueting operations, conference spaces, and our coffee shop, Paddy & Scott’s. You will lead your teams to deliver exceptional guest experiences, efficient operations, and strong financial performance.

This is a full-time position, working 5 days out of 7, including evenings, weekends, and key bank holidays.

Key Responsibilities
  • Manage daily F&B operations across all outlets.
  • Deliver exceptional guest experiences through attention to detail, product knowledge, and team engagement.
  • Supervise, motivate, and develop team members to uphold high service standards and brand consistency.
  • Work closely with the Head Chef and kitchen team to ensure smooth service delivery and consistent food quality.
  • Support menu rollouts, promotional activity, and continuous service improvements.
  • Monitor stock levels, purchasing, and cost control to achieve budgeted profitability.
  • Assist with scheduling, labour management, and performance monitoring.
  • Ensure compliance with all food hygiene, health & safety, and licensing regulations.
  • Support the planning and execution of conferences, weddings, and private events.
About You
  • Minimum of 2 years’ management experience within a hotel or restaurant environment.
  • Strong operational knowledge across restaurant, bar, and events settings.
  • Confident leader who leads by example and maintains high standards.
  • Excellent communication and interpersonal skills, with the ability to motivate and develop teams.
  • Commercially aware, with a good understanding of cost control, margin management, and guest satisfaction metrics.
  • Highly organised, adaptable, and comfortable in a fast-paced, hands-on environment.
  • Flexible to work a variety of shifts, including evenings and weekends.
