Responsibilities

  • Complete thorough overnight cleaning of all kitchen back‑of‑house areas, including pot wash zones, prep rooms, dish areas, storage spaces, corridors, walk‑ins, and BOH facilities.
  • Deep clean kitchen equipment, machinery, surfaces, floors, and extraction areas according to cleaning schedules, hygiene standards, and daily/weekly rota requirements.
  • Clean, sanitise, and reset the staff canteen service and dining areas, ensuring they are ready for the morning team and meet hygiene and safety expectations.
  • Follow strict Food Safety, HACCP, COSHH, and hygiene procedures for all cleaning activities, ensuring correct chemical use and safe working practices.
  • Operate cleaning equipment including dishwashers, pot wash machinery, floor machines, and chemical dosing systems.
  • Ensure proper waste disposal, recycling procedures, and rubbish removal from BOH and kitchen areas during the night shift.
  • Replenish cleaning chemicals, bin liners, cloths, gloves, and BOH consumables, reporting low stock or maintenance issues promptly.
  • Maintain organised and clean BOH storage areas, ensuring tools, chemicals, and equipment are safely stored and labelled.
  • Support smooth kitchen operations by resetting BOH workspaces, ensuring surfaces, equipment, and floors are ready for the morning chefs.
  • Conduct accurate nightly checks and complete cleaning documentation, logs, and task sheets as required.
  • Report any equipment faults, maintenance concerns, safety issues, or unusual activity immediately to the Night Manager or Back of House Manager.
  • Demonstrate a professional, responsible, and proactive attitude, representing the values and standards of The Twenty Two at all times.

Qualifications

  • Experience in commercial kitchen or back‑of‑house cleaning preferred.
  • Familiarity with COSHH regulations, chemical safety, and commercial cleaning equipment.
  • Experience working night shifts desirable.
  • Knowledge of Food Safety and hygiene best practices in a hospitality environment.
  • Excellent attention to detail.
  • Highly organised and self‑motivated.
  • Reliable, punctual, and responsible.
  • Strong awareness of hygiene and safety standards.
  • Ability to work independently and manage own workload.
  • Calm and efficient under pressure.
  • Positive attitude and strong work ethic.
  • Respectful and discreet in all areas of the property.
