Responsible to: Sous Chef

Responsible for: the hygiene and cleanliness of the kitchen

Hours: up to 50

Scope and general purpose: Ensure the kitchen and associated areas are cleaned to the Torridon standards, including all floors, walls, equipment and preparation areas.

Main Responsibilities:

  • Report any faults, breakages, or sub-standard equipment to the sous chef.
  • Ensure all crockery, cutlery, and equipment are ready for service.
  • Coordinate the washing of all restaurant crockery and cutlery.
  • Communicate effectively with the Kitchen team and other departments.
  • Talk to guests effectively about the resort and what is on offer with a genuine sense of interest.
  • Clean all back corridors to ensure clean entry to the kitchen.
  • Support team members on shift with you so they are working in a positive and productive friendly environment.
  • Coordinate with the daily tidying and cleaning of Team Kitchen Areas.
  • Ensure a continuous level of self-development.
  • Re-stock and replenish equipment and supplies as necessary.
  • Coordinate the washing up of kitchen pots, pans and utensils.
  • Coordinate the full cleaning of the kitchen.
  • Follow all SOPs and make suggestions as required if efficiency and effectiveness can be improved.
  • Ensure complete compliance of self with Health & Safety regulations.
  • Report any failures of health & safety immediately following see it sort it fix it policy.
  • Comply with the Cook Safe Guidelines.
  • Coordinate the daily/weekly and monthly deep cleaning schedules.
  • Coordinate the emptying of bins and waste in the kitchen and the cleanliness of the external refuse bins as required.
  • Proactively assist with sustainability in your department in reducing energy consumption, and wastage.
  • Recycle all waste appropriately.
  • Assist with the recycling for the kitchen and reduce use of single use plastic.
