Responsible to: Resort Food and Beverage Manager

Responsible for: Being a Top Performer Barman

Hours: 45 hours over 5 days

Scope and General Purpose: Supervise the bar service on your shift to exceed the expectations of our guests in bar service to a five-star standard, by creating unforgettable memories and inspiring and challenging yourself to deliver them with passion.

Main Responsibilities:

  • Guests & Quality: Host and coordinate the bar experience at the Bo and Muc & Whisky Bar for all guests to a +1 standard. Ensure that service is delivered with excellent product knowledge and a professional understanding of menus, cocktails, beers, spirits, wines and suppliers. Prepare bills, and process guest payments and transactions using the POS system. Communicate with guests to resolve issues and complaints to ensure satisfaction. Ensure the 'cash-up' of the takings, to record and store safely. Ensure the 'lock-up' procedure of the bar at the end of service so the building is secure and safe. Assist and co-ordinate the cleaning of bar and guest areas so that it is always of the highest order. Liaise with the Resort Food and Beverage Manager in supporting professional drinks service and knowledge. Communicate effectively with the food service team and other departments and assist when necessary or upon request by a Manager. Assist with the service of food as required to support the restaurant teams.
  • Team: Assist with drinks training for the team as required by Management to influence up-selling and suggestive selling. Assist with departmental training for yourself and others when necessary. Ensure the rules for alcohol service to the team are always upheld.
  • Productivity: To assist with the completion of departmental checklists, cleaning rotas and operation procedures to ensure maximum efficiency. Ensure bar stock is monitored to ensure all stock items for the bar are available and do not run out. Regularly monitor stock for quality and use by dates to ensure efficient and effective rotation and compliance.
  • Health & Safety: Supervise the health and safety on shift, record and diagnose hazards. Ensure complete compliance of self and team with Health & Safety regulations. Ensure the psychological safety of all team members so they do not fear speaking to you and any other member of the team. To assist with implementation of any new policies, practices to ensure a continuous process of improvement within departments. To apply the safe service of alcohol in line with the Licensing (Scotland) Act 2005.
  • Sustainability: Proactively supervise ESG on your shift in reducing energy consumption and wastage, and creative ideas for embedding the policy within your team and your department. Be able to clearly communicate our ESG policy and Earth Check to the team, guests, and suppliers.

Essential Requirements:

  • At least 12 months bar experience.
  • UK passport/Pre-Settled Status and/or valid visa.
  • Wine Knowledge.
  • Whisky and Gin Knowledge.
  • Cocktail Knowledge.
  • Passionate about Food.
