The Terrace is the only Isle of Wight restaurant listed in the Michelin, AA, Good Food and Harden’s guides. Our kitchen is spotlessly clean and very well organised and our team are all very good cooks with positive attitudes. We currently have an opening for a Senior Chef to take a support role within the team owning bulk prep of breads, sauces, garnish and proteins across all sections. The role will also encompass management of your own stock and storage and ordering as well as training more junior team members. The key advantage of the role is hours from 7am to 5pm five days a week. This is to allow the bulk of prep to take place out of core hours and for the role to offer assistance on busy lunchtime services.
Responsibilities
- Own bulk prep of breads, sauces, garnish and proteins across all sections.
- Manage stock and storage and ordering.
- Train and mentor more junior team members.
- Collaborate on costed, achievable dishes that reflect the season.
Qualifications / Skills
- Ability to self-manage as a chef, including understanding and adjusting recipes and documenting changes.
- Stock management and clear communication; planning based on expected covers to understand volumes and ensure sensible ordering.
- Clean, efficient worker who sets a good example to less experienced team members.
- Experience at head chef, sous chef, or CDP looking to step up into a management role.
Environment and Hours
- Hours from 7am to 5pm, five days a week.
- Fixed service structure with 15-minute slots; no unpredictable late nights or non-standard disruptions.
- Rota published two weeks in advance; tips are excellent.
Location and Equipment
- Located in Yarmouth overlooking the Harbour; you will need your own transport or live locally.
- Three fully working combi ovens, decent blenders and mixers, two large vac machines, a big walk-in, brand new plates and quality equipment.
- When something is missing, it is purchased.
- Menus change roughly every 6 weeks to remain seasonal and are executed in a manageable way across the menu.
