The Talbot in Brockley is looking for an experienced and motivated Sous Chef to join our kitchen team at our busy neighbourhood pub in South East London. The Talbot is a much-loved local pub at the heart of Brockley, serving great food and drink in a relaxed and welcoming setting. Our kitchen focuses on fresh, seasonal British cooking with modern European influences, from quality pub classics to a strong Sunday roast.

We’re looking for a talented Sous Chef who is passionate about good food, enjoys working with fresh ingredients and wants to play an important role in developing a consistently excellent kitchen.

The role

Working closely with the Head Chef, you’ll be a key part of the day-to-day running of the kitchen, helping to lead the team, deliver consistently high standards and ensure every service runs smoothly. You’ll also have the opportunity to contribute ideas to menus, specials and the continued development of the food offer at The Talbot.

Your responsibilities will include:

  • Supporting the Head Chef with the day-to-day management of the kitchen
  • Leading busy services and running the kitchen in the Head Chef’s absence
  • Preparing and delivering fresh, seasonal dishes to a consistently high standard
  • Contributing to menu development, daily specials and new dishes
  • Training, supporting and motivating junior members of the kitchen team
  • Managing food preparation, ordering, stock rotation and waste
  • Helping achieve food gross profit and labour targets
  • Maintaining excellent standards of cleanliness, food safety and allergen management
  • Helping create a positive, organised and professional kitchen culture

About you

We’re looking for someone who:

  • Has previous experience as a Sous Chef or Junior Sous Chef
  • Is passionate about fresh, seasonal British and modern European food
  • Has strong kitchen and service skills and leads by example
  • Can remain calm, organised and focused during busy services
  • Takes pride in consistency, presentation and attention to detail
  • Understands food safety, allergen procedures and kitchen compliance
  • Enjoys training and developing other chefs
  • Understands the importance of food cost, stock control and reducing waste
  • Is reliable, positive and wants to be part of an ambitious kitchen team
